The only aspect of Next that does not change is its location in the Fulton River District. At Next, the menu completely changes every few months at the command of Grant Achatz, chef and owner of both Alinea and Next. Each new menu focuses on a different time period or part of the world. Past menus have been "Paris," "Thailand," "The Hunt," and even "Vegan." Next keeps you on your toes because you never know what is coming. When the menu shifts, it is as if you are visiting a brand new restaurant for the first time, but the consistent notes of prestige and heightened flavor are still detectable as they move from one concept to concept. The staff is incredible, as the servers never miss a beat when reciting the course descriptions, no matter the menu.
